Andiron was a gorgeous restaurant concept that drew on "traditions from Texas and travels abroad to upend expectations of the wood-burning steakhouse." According to eater.com, "Sambrooks Hospitality, the restaurant group that operates the Pit Room and Michelin-recognized Tex-Mex restaurant Candente, opened the swanky, live-fire steakhouse in April 2023. The restaurant quickly became known for its vibey ambiance, unconventional decor, and a menu that touted dishes like wagyu katsu sandwiches, salt-crusted sandwiches, and beef carpaccio, all of which incorporated live fire."

When New York-based interior design firm AvroKO first approached me to commission Andiron's semi-permenant grand opening floral designs, the vision they had developed with the client was for earthy arrangements that reflected the raw wood and copper fits and finishes of the dining room itself, and also incorporated nods to local flora with culinary uses; herbs like Texas sage and rosemary. The original ask was a full-ceiling hanging installation of dried herbs and grains at the entrance to the space, above the hostess station, but much like the restaurant concept itself, the design brief kept evolving to best serve the needs of the client (and their guests), and ultimately I ended up creating a collection of eight large-scale arrangements using faux and dried materials, and sourcing/hand-painting six of the vessels to achieve the exact coper patina we wanted, but were unable to find in the marketplace. I was brought back for one season update of the floral designs before the restaurant completed its final day of service in March of 2025. It was an honor to be a part of such an experimental venture.

After two memorable years, our time at Andiron has come to a bittersweet end. While it’s always an extremely difficult decision to close a concept, I am incredibly proud that our team brought to life something unique on the Houston dining scene, and continuously delivered the highest levels of food and service. 

Andiron was a magical place, and we are proud of the experiences we were able to create for our community. Sambrooks Hospitality remains intensely committed to our Michelin recognized Candente and two Pit Room restaurants, where our love for quality barbecue and authentic Tex-Mex shine brightest.
